I am a big fan of traditional apple butter, the dark, spicy sort enriched with cinnamon, clove, allspice, brown sugar and sweet cider. But every once in a while you come across an apple which is such a flavor powerhouse on its own, you want to let it shine. Thus was born the Light Apple Butter. The apples in this year’s batch are Pink Ladies, a tart, effervescent varietal, so pretty that it almost seems a shame to turn them into butter. At least I thought so, until I tasted it.
Ingredients: Pink Lady apples, water, sugar.
